Slow Cooking Thursdays




Welcome to Slow Cooking Thursdays. Your (mostly) weekly insight into Molly's rather whack life of momming, reality tv, ministry and pretending to be a real chef.



What has happened this week so far:
Trying to get back in the swing of things. School has started back up, work is back up and going. Bonus of the week was the new Dairy Queen in town opening and we went for dinner and ice cream.

What's up for the weekend:
Friday we will be home, painting, although I expect Urs will want to go out with her friends. Saturday is chores, painting and in the afternoon, Urs has dance. Sunday is church, ice skating with the middle school students and Community with the junior high and senior high.

Song In My Head:
I think I finally have figured out Spotify and have decided to make my playlists. I have been going back and forth between country and classical for some reason. Mostly I am loving this song by Jason Aldean.


Ursula Story of the Week
Tonight, because our kitchen is in ruins while I am painting and because I wanted to, Urs and I watched Project Runway after we had dinner. It was nice to have her just her snuggle with me while we decided if we liked the clothes folks were wearing or not.

I am procrastinating about:
Finishing the kitchen. I am only doing it sporadically. I need to buckle down this weekend.

Scripture I am trying to wrap my head (and heart) around:
So I love this translation of Romans 12. I am going to try to read this everyday and make it my 2012 passage.

If you preach, just preach God's Message, nothing else; if you help, just help, don't take over; if you teach, stick to your teaching; if you give encouraging guidance, be careful that you don't get bossy; if you're put in charge, don't manipulate; if you're called to give aid to people in distress, keep your eyes open and be quick to respond; if you work with the disadvantaged, don't let yourself get irritated with them or depressed by them. Keep a smile on your face.

Love from the center of who you are; don't fake it. Run for dear life from evil; hold on for dear life to good. Be good friends who love deeply; practice playing second fiddle.

Don't burn out; keep yourselves fueled and aflame. Be alert servants of the Master, cheerfully expectant. Don't quit in hard times; pray all the harder. Help needy Christians; be inventive in hospitality.

Bless your enemies; no cursing under your breath. Laugh with your happy friends when they're happy; share tears when they're down. Get along with each other; don't be stuck-up. Make friends with nobodies; don't be the great somebody.

Don't hit back; discover beauty in everyone. If you've got it in you, get along with everybody. Don't insist on getting even; that's not for you to do. "I'll do the judging," says God. "I'll take care of it."

Our Scriptures tell us that if you see your enemy hungry, go buy that person lunch, or if he's thirsty, get him a drink. Your generosity will surprise him with goodness. Don't let evil get the best of you; get the best of evil by doing good.


Favorite reality TV minute this week
It has been forever since I have had a Slow Cooking Thursday, but I wanted to do the happy dance when Geoffrey Zakarian won Next Iron Chef. I am starting to really get into Top Chef. I love that it is in Texas and I am recognizing things. Although still not a fan of the whole internet Redemption Island thing, I love how the characters are developing on the real show. Project Runway All Stars started tonight and I am missing some of the familiar characters. And by that, I men Tim Gunn. The mentor just doesn't seem to be the warm, but tough advocate that Tim is. Jury still out. I am calling the final 3 as Rami, Kara and Mondo.

On the Culinary Front
The kitchen is a general state of disrepair as the updating painting and cabinet work continues. That being said, over the Christmas break, I was a cooking fool.

Slow Cooking Dinner for tonight:
I got this from Full Bellies, Happy Kids

Chicken Parmesan
Ingredients
2-4 boneless, skinless chicken breast halves
1/2 cup plain bread crumbs
1/2 cup grated Parmesan cheese
1 tsp. Italian seasoning
1/4 tsp. ground black pepper
1/4 tsp. kosher salt
1 Tbs. olive oil
1 egg, beaten
4-6 slices mozzarella cheese
1 jar (28-ounces) favorite marinara sauce

Directions:
Drizzle 1 tablespoon olive oil over the bottom of the crockpot stoneware.
In a medium bowl, beat egg. In second medium bowl, mix the bread crumbs, spices, and grated Parmesan cheese all together.
Dip chicken in beaten egg and then toss into bread crumb mixture to coat completely on both sides. Place chicken breasts on bottom of crockpot. Place a layer of mozzarella slices on top of breaded chicken breasts. Cover cheese layered chicken with entire jar of sauce.
Place lid of crockpot securely on and turn heat to LOW for 6-7 hours or HIGH for 3-4 hours. Serve over cooked pasta of your choice.
